For some reason, I tend to get into “moods.”  One minute I’m sitting on the couch, and the next, I’ve decided to pull out all my baking products and make 2 different kinds of cookies, homemade bread, and peach butter. I’m completely driven and I’m gonna bake as much as I can in the next few hours!

This is what happened to me this weekend.  I had a singular focus on BAKING!   It was definitely fun, and friends and family enjoyed reaping the benefits.  Oatmeal cookies, Snickerdoodles, White Bread, and Peach Butter…they all made our world better this weekend.

Here’s the recipe for our favorite Oatmeal Raisin Cookies…the husband loves them, and they’re such an easy treat for him! 🙂

Oatmeal Raisin Cookies

1 ¼ cups flour

1 c. butter (softened)

¾ Cup brown sugar

1 pkg vanilla instant pudding mix

3 ½ cups oatmeal

1 c raisin

1 tsp baking soda

¼ c sugar

2 eggs

Mix flour, baking soda,  and set aside

Combine softened butter, sugar, and pudding mix in bowl and beat until creamy.  Add eggs.

Gradually add flour mix

Stir in oatmeal and raisins by hand.  Batter will be stiff.

Drop onto un-greased cookie sheet, place in oven at 375 degrees for 10-12 minutes.
